6 ears of corn
1 Tbsp butter
3 Tbsp diced shallots or onion
1 tsp salt
1/2 tsp pepper
1 Tbsp brown sugar
1 Tbsp honey
1/4 tsp cayenne

Directions:
Directions:
Cut the corn off the cob.
Put 1 Tbsp butter in a saucepan on medium high heat and cook the shallots with salt and pepper until soft.
Add the corn and cook until tender.
In a bowl, add brown sugar, honey and cayenne.
Mix well to combine and stir into the corn mixture and cook for a couple of minutes, stirring constantly.

I like to make this then put it in a low oven to let the flavors blend a little. It's a great slightly sweet, slightly hot side dish.
