2 cups whipping cream
2 cups half-and-half
8 oz. semisweet chocolate, chopped
1/3 cup sugar
8 large egg yolks
8 tbsp sugar

Directions:
Preheat oven to 300.
Bring the cream and half-and-half to a boil in a heavy saucepan and reduce the heat to low.
Add the chocolate and cook until melted, whisking constantly. Remove from heat.
Whisk 1/3 cup sugar and egg yolks together, then slowly add to the chocolate mixture. Strain into 8 custard cups.
Place the custard cups ina baking pan and add enough hot water to reach halfway up the sides. bake for 50 minutes. Remove from the water.
Cool for 2 hours. Chill, covered, for 8 hours or longer.
Preheat the broiler. Sprinkle the top of each with 1 tbsp sugar. Broil for 3 minutes or until golden brown, or use a culinary torch.
Chill for 1 to 2 hours.
