Package of ground turkey (16 oz)
Italian bread crumbs 1 c
Parmesan cheese 1/2 c +
Salt, pepper, Italian spices of choice
Optional minced onion (fresh - small)
Minced garlic or garlic powder (I use 3 cloves fresh and chopped)
Flat parsley 1/2 bunch chopped in food processor
4 cups raw/chopped greens (I use a small box of spinach, can use kale)
1 egg
Skim milk - to give appropriate consistency for meatballs

Mix all ingredients together. Using a large melon baller, form small meatballs and place on tray covered in parchment paper.
Cook at 350 degrees for 20-25 minutes. Meatballs are done when you press a finger into a meatball and it springs back
I like to make these ahead of time. I heat spaghetti sauce (in pan on stove top) and pop in as many meatballs as needed for a meal. Heat thoroughly. Can also be warmed up in stove at 325 degrees.
Serve with cooked spaghetti squash or pasta.
