1 lb. Italian Sausage
1 c. Chopped Onion
2 cloves Garlic
5 c. Beef Broth (3 cans)
c. Water
c. Wine- Red or White
2 c. Tomatoes - peeled and chopped
1 c. Carrots - thinly sliced
3 tsp. Fresh basil
tsp. Oregano
8 oz Tomato sauce
1 Zucchini - sliced
8 oz Tortellini - meat or cheese filed
3 T. Fresh parsley
1 med Green pepper- cut up
2 handfuls Fresh Spinach
Parmesan Cheese as desired

1) Brown sausages and season with basil and oregano.
2) Drain grease and then pat with paper towels.
3) Dice sausage
4) Saute onion and garlic with water, wine, broth and other liquids.
5) Bring to a boil
6) Add carrots and simmer for 30 min
7) Skim off fat
8) Add green pepper, zucchini and tortellini and simmer for 30-40 mins.
9) Take off heat add in spinach, sausage and sprinkle with parmesan cheese
