3 cups flour
2 tsps. baking powder
1 tsp. baking soda
1 tbsp. cinnamon
½ tsp. salt
2 cups grated carrots
2 cups sugar
1 cup oil
4 eggs, beaten
½ cup nuts, chopped
3 oz. cream cheese
1 tbsp. water, warm
1 tsp. vanilla
2 cups icing sugar

Directions:
Directions:
Sift together flour, baking powder, baking soda, cinnamon and salt. Add carrots, sugar, oil, eggs and nuts. Add sifted dry ingredients and mix well. Pour into a 9" square cake pan, well buttered and floured. Bake in 350ºF oven for 1 - 1½ hours. Cool.Cream cheese frosting: Mix together cream cheese, warm water, vanilla and icing sugar; blend well.
