Carrot Cake Recipe

3 cups flour
2 tsps. baking powder
1 tsp. baking soda
1 tbsp. cinnamon
tsp. salt
2 cups grated carrots
2 cups sugar
1 cup oil
4 eggs, beaten
cup nuts, chopped
3 oz. cream cheese
1 tbsp. water, warm
1 tsp. vanilla
2 cups icing sugar

Sift together the flour, baking powder, baking soda, cinnamon and salt. Add the carrots, sugar, oil, eggs and nuts. Add the sifted dry ingredients and mix well. Pour into a 9" square cake pan, well buttered and floured. Bake in 350F oven for about 1 - 1 hours. Cool and ice with cream cheese frosting.
Cream cheese frosting: Mix together cream cheese, warm water, vanilla and icing sugar; blend well.
