Almond Cheesecake Recipe

1 1/2 C finely crushed oreos

3 Tbs butter - melted

3 8 oz pkgs cream cheese

1 8 oz tube almond paste

1 C sugar

4 eggs

1 8 oz carton sour cream

For crust:

Grease a 9" springform pan.

Combine crushed cookies and butter in small bowl. Press into bottom of pan. Set aside

For Cheesecake:

Mix cream cheese and almond paste in large bowl. Beat on Med-high speed until combined. beat in sugar until fluffy.

Add eggs and sour cream, beating on low just until combined. Pour filling onto crust.


Place springform pan on shallow baking sheet. Bake at 325 about an hour, or until center appears nearly set. Cool on

rack for 15 min loosen sides of pan with metal spatula. Cool 30 min more. remove sides of pan and chill at least 4 hours.
