1 large bunch cilantro
2 - 3 garlic cloves, chopped fine
½ to 1 tsp. salt
⅓ c. olive oil, more as needed

Directions:
Directions:
Wash cilantro well, remove stems and dry between paper towels. Put cilantro, garlic and salt in food processor or blender. Turn on processor and add oil in a stream. Scrape down sides of processor and blend to consistency of pesto. Add more oil if needed. Taste for seasoning. Store in refrigerator up to 3 days. Serve with almost anything--bread, pasta, chicken, fish, meat or salads.
