10 oz cremini mushrooms
1 shallot
2 cloves garlic (minced)
1 c. Ricotta Cheese
1 oz Parmesan Cheese
1/2 oz. Truffle oil
2 Naan Flatbread
1 oz baby arugula
1/4 t. salt
1/4 t. pepper
2 t. olive oil

Directions:
Directions:
Slice mushrooms. Peel & mince shallot. Mince garlic. Combine Ricotta cheese, half Parmesan cheese, salt, pepper and olive oil.

Heat non-stick pan over medium-htigh heat. Add olive oil, mushrooms, salt to taste. Brown mushrooms until moisture is gone. Add shallots & garlic, cook, stirring until golden brown, approximately 3-4 minutes. Remove from burner and stir in half of the truffle oil. Taste & season with salt and pepper.

Lightly coat flatbread with cooking spray and place in oven for 3-4 minutes to crisp, 400 degrees. Remove from oven and spread Ricotta mixture and mushrooms. Bake until edges are brown or crispy, approximately 5-8 minutes. Let cool before cutting.

Combine arugula and remaining truffle oil. Top flatbread with arugula and Parmesan cheese.
