2 ½ c. shredded chicken
2/3 c. picante sauce
1/3 c. green onion slices
½ tsp oregano
½ tsp salt
1 tsp cumin
8 flour tortillas (7-8 in)
¼ c shredded cheddar or Monterey Jack cheese - can add more to taste

Directions:
Directions:
Combine chicken, picante sauce, onion, cumin, oregano, and salt in a saucepan, let simmer about 5 min until most of liquid has evaporated. Brush one side of tortillas with butter and spoon about 1/3 cup of chicken mixture onto center of unbuttered side of tortilla. Top with 2 tbsp. of shredded cheese and fold 2 sides of tortilla over filling and then fold ends down. Place seam side down in a 13 x 9 x 2-inch baking dish and bake in preheated oven at 475º for about 15 minutes or until crispy and a little golden brown. Can top with guacamole and additional cheese or picante sauce.
