2 Tbsp oil
1 cup milk
1 cup flour
2 Tbsp baking powder
2 Tbsp sugar
1/2 tsp salt

Directions:
Directions:
Beat together - egg, oil, milk in a large measuring cup. Sift together - flour, baking powder, sugar and salt.
Add dry to wet and mix gently until everything is incorporated. You want some lumps!

Make sure your griddle is hot but not quite smoking. Oil it lightly and pour out the size of pancake you want.
When you see bubbles form around the edge of the pancake watch for when they don't close back up.
That's when you flip it. Cook on other side, eat!

We eat pancakes a lot and this is a favorite because it's basic, not foo foo, and always good. It is delicious with blueberries or banana chunks mixed in. With peanut butter and syrup, of course.
