1¼ cups graham cracker crumbs
¼ cup margarine or butter, softened
12 oz. cream cheese, softened
½ cup icing sugar
juice from ½ large lemon
½ tsp. vanilla extract
3 oz. pkg. strawberry flavoured gelatin (or raspberry gelatin)
1 cup boiling water
10 oz. pkg. frozen strawberries (or raspberries)

Mix graham cracker crumbs and butter or margarine together. Press mixture into an 8" square pan. In a large bowl cream together softened cream cheese, icing sugar and lemon juice. Set aside. Whip heavy cream with vanilla extract. Fold into cream cheese mixture and pour over graham cracker crust. In a medium sized saucepan, dissolve gelatin powder in boiling water, Remove from heat. Add frozen fruit and stir until fruit is separated and gelatin is partially set. Pour over whipped cream cheese mixture. Refrigerate at least 2 hours.
