1 bottle Lawry's Baja Chipotle Marinade
2 boneless, skinless chicken breasts, cut in half horizontally
1 tbsp. canola oil
8 ounces orzo
2 cups chicken broth
2 tbsp. tomato paste
2 tsp taco seasoning
4 tbsp. queso cheese dip

Directions:
Directions:
Marinate chicken in marinade for 30 minutes or overnight.
When ready, grill chicken until done.
While the chicken is grilling, heat oil in a large saucepan over medium heat and add orzo. Cook, stirring constantly until lightly browned. Stir in taco seasoning, tomato paste, and chicken broth. Bring to a boil; reduce heat to low and cover. Simmer 15 to 20 minutes. Fluff with fork.
To assemble the dish, place 1/4 of the orzo on a plate and top with a piece of chicken. Top each serving with 1 tbsp. queso dip.

Yield: 4 servings
