1/2 cup refried beans
1/4 tsp cumin
2 extra thin corn tortillas, cut into pieces and crisped in air-fryer or skillet
1/4 cup reduced fat shredded cheddar cheese
2 eggs
1 tbsp. diced green chilies

Directions:
Directions:
Preheat oven to 350.
Combine refried beans and cumin; spread in the bottom of a 2 cup oven safe baking dish. Top with tortillas, then add the cheese. Beat the eggs and green chilies and pour over top. Bake for 35 minutes and then microwave for 30 seconds to 1 minute to set the eggs.
