2 1/4 c all purpose flour
2/3 c sugar
1 1/2 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
3/4 tsp salt
1/2 c vegetable oil
3 eggs
1 8 oz can crushed pineapple (with juice)
1 1/2 c shredded carrots (2-3 medium)
1/2 c raisins
1/2 c sweetened coconut
1/2 c walnuts chopped

Preheat oven to 350. Line 12 muffin cups with paper liners. In large bowl, mix together flour sugar, baking soda, baking powder, cinnamon and salt. In a separate bowl, beat together oil, eggs, and pineapple. Stir eggs mixture into the flour mixture just until combined. Stir in the carrot, raisins, coconut and walnuts. Scoop batter into prepared muffin cups. Bake for 20 minutes or until toothpick inserted in the center comes out clean.
