1 c butter softened
1/2 c confectioners sugar
1 tsp vanilla
2 1/4 c all purpose flour
3/4 -1 c finely chopped pecans
additional confectioner sugar for rolling cookies

Directions:
Preheat oven to 350º. Line baking sheet with parchment paper. In a stand mixer cream butter and sugar together til light and fluffy. Add vanilla and slowly add flour mixing just until combined. Fold in nuts on low speed until well mixed.
Roll dough into 2 tablespoon sized dough balls. Place on prepared pan about 2" apart. Repeat until all the dough is used up. (Chill dough for 30 minutes before rolling). Bake 14-15 minutes until bottoms are just slightly brown. Rotate pans halfway through baking time. Remove from oven and cool on baking sheet for about 2 minutes until you can handle them comfortably with your hands.
Meanwhile sift 1/2 c confectioners sugar in a medium bowl. While cookies are still warm, roll them in sugar. Once they have cooled completely roll in sugar again.
Store cookies in airtight container up to 3 days or freeze.
