2 tbsp. butter
1/4 cup sugar
2 eggs - separated
1/2 cup flour
2 lemons - juiced and zested
1 1/4 cups milk

Candied Lemon Peel:
4 to 8 lemons - washed and dried
1 cup water
1 cup sugar
1/4 cup corn syrup

Directions:
Directions:
Preheat oven to 350º. Cream butter and sugar well, add egg yolks, one at a time. Add the flour and lemon juice with zest with the milk. Mix well. Beat the egg whites until stiff peaks form and fold into lemon mixture. Pour into an 8: or 9" pan and bake for 40 minutes or until lightly browned and set. Sprinkle with confectionary sugar. If desired top this with whipped cream then sprinkle candied lemon peels on top.


Place in a pan and cover with water, bring to a boil - drain- repeat twice. Remove from pan, add sugar, corn syrup and a little water to hydrate. Add the peels back and cook over low heat 1-2 hours, strain and place on rack to cool. Keep checking and when still a bit tacky toss in sugar.

For this recipe I poured the mixture into small individual jelly/mason jars. They were very cute and the serving size perfect.
