4 tomatoes
2 English cucumbers
1 green pepper
1 red onion
Kalamata olives - pitted
pinch salt
1-2 tbsp. red wine vinegar

Dressing:

4 tbsp. olive oil
Feta Cheese
dried oregano

Directions:
Directions:
Cut tomatoes into wedges or small chunks. Score the cucumber then slice in half lengthwixe then chop into 1/2" slices. Core the pepper and slice in half then in rings. Peel onion then slice in half and then slice into thin half moons.

Place all the veggies into a bowl then add the olives.

Mix the olive oil with the vinegar and toss with the vegetables. Add the feta on top. Sprinkle with oregano and toss again.
