Ingredients: Buttermilk Baking Powder Biscuits - 425 F about 16 minutes - 9 biscuits
Blend: 1 ½ Cups Flour 1 ½ Tblsp. Sugar 1 ½ tsp. Baking Powder ¼ tsp. Baking Soda ¼ tsp. Salt
Add: ½ Cup Cold Butter GRATED; blend with pastry blender
Add: grated cheese now if making cheese biscuits. About 27 “grates” of cheddar.
Add: ¾ to 7/8 Cup Buttermilk

Directions:Knead gently on floured wax paper or cutting board. Either press to an 8x5 rectangle to use a 2 ½ inch cutter or make a long roll on the wax paper; mark into 9 biscuit sections and cut with a sharp knife or scissors & roll into a biscuit.
Put onto a greased cookie sheet. Brush tops with milk/cream if you like a crunchy top.
1. The recipes always say to cut the cold butter up into chunks and mix it with your dry ingredients using your pastry blender until it looks like pastry mix before you add the liquid. Well what I do is use cold butter out of the fridge, but instead of cutting it into chunks and then blending it, I GRATE it with my cheese grater. Much easier & faster to blend with your pastry blender. 2. Also I measure out several bags of the dry ingredients so when I need to make the biscuits I just have to grate the cheese (if making cheese biscuits), butter and add the milk. Instead of rolling out the dough & using a glass or cutter, I make a role on wax paper like a jelly roll; mark of the # of biscuits to cut and use my kitchen scissors to quickly cut them. 3. If you don’t have Buttermilk on hand, use whole milk or skim+cream and add ½ tsp. lemon juice or vinegar & let it stand 10 minutes before you are going to use it.
