c. sliced onion
2 T. butter
1 - 2 lbs. fresh spinach or 10 oz. frozen
5 c. chicken stock
⅓ c. raw rice
Salt and pepper
Nutmeg
c. cream
2 egg yolks

Directions:
Directions:
Saute onion in butter; add spinach and chicken stock. Stir in rice and simmer until tender; add seasonings. Puree mixture in blender. Blend cream and egg yolks and pour into saucepan with pureed spinach mixture. Heat until simmering and serve.
