1 Tbsp olive oil
1 medium potato, peeled and cut into 1/2 in cubes
2 medium carrots, chopped
1 medium onion, chopped
2 celery ribs, chopped
1 medium zucchini, chopped
1 can (15 1/2 oz) navy beans, rinsed and drained
2 to 2 1/2 cups vegetable or chicken broth
1 can (8 oz) tomato sauce
2 tsp parsley flakes
1/2 tsp dried thyme

1. In a dutch oven, heat oil over medium-high heat. Ad the potato and carrots; cook and stir 3 min. Add the onion, celery, zucchini; cook and stir 3-4 min or until vegetables are crisp-tender.

2. Stir in the remaining ingredients; bring to a boil. Reduce heat; simmer, covered, for 12-15 min or until the vegetables are tender.
