"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Step 1
Whisk together the first 9 ingredients in a large bowl. Transfer sauce to a large disposable aluminum pan and set aside.
Step 2
Season pork steaks to taste with black pepper and grill until well-browned, 6-7 minutes a side. Transfer steaks to pan with sauce and turn to coat. Cover pan with foil and place back on grill. Cook steaks indirect about 90 minutes, until tender. Check after an hour to see if sauce looks too thick; if so add a little water.
Step 3
Carefully remove pan from grill. Remove steaks to serving platter. Skim excess fat from sauce and serve on the side.
