4 1/2 c. milk
3/4 c. sugar
Rind of 1 lemon grated
1 1/2 tsp. salt
3/4 c. Farina
1 tsp. vanilla extract
1-2 eggs
1 c. plain breadcrumbs

Directions:
Directions:
Combine milk, salt, sugar, lemon rind.

Cook in a heavy 3 qt saucepan - DO NOT LET IT BOIL

Add Farina so it does not get lumpy

Bring to a boil for 5 mins or until thick

Add 1 tsp. of vanilla extract

Pour onto a greased platter or baking sheet until cool

Cut into diamond shaped pieces

Dip into egg batter then breadcrumbs. Fry in vegetable oil until brown

Sprinkle with sugar & serve warm
