3 cups chopped Roma plum tomatoes
4 T diced red onion
2 large cloves garlic, minced
4 T chopped fresh basil
4 T olive oil
1 tsp red wine vinegar
1/2 tsp salt
dash black pepper
Loaf of French baguette or crusty Italian bread
1/2 tsp garlic salt


Directions:
Directions:
Combine the tomatoes, red onion, garlic and basil in a bowl. Add 1T of oil, vinegar, salt and pepper and mix well. Cover bowl and let sit in refrigerator for at least one hour. Cut bread into 1/2 inch slices on an angle. Combine 3T olive oil with garlic salt and brush on each side of bread. Broil each side for 1 minute-watch carefully so doesn't burn. Arrange bread slices on platter. Serve with tomatoes mixture.


Can add fresh parmasean cheese to tomato mixture if desired.
