3 Cups Zucchini (diced with skin on)
1 Onion (diced)
1 Cup Bisquick
4 Eggs
1/2 Cup Oil
1/2 Cup Parmesan Cheese
1/4 teaspoon Salt
1/4 teaspoon Pepper

Directions:
Directions:
Preheat oven to 350. Beat eggs, put everything into a bowl and mix well. Pour into a rectangle, greased casserole dish. Bake 40-50 minutes. When golden brown turn oven off, open oven door, and leave pie in oven until cool (or it will crack). Serve like you would lasagna.
