Broccoli Cheese Quiche Recipe

3 frozen pie crusts
1 package frozen broccoli
1 yellow onion
8 eggs
2 cups cream
2/3 cup parmesan cheese
2 cups grated cheddar cheese
salt and pepper

-toss frozen broccoli in oil and roast in 425 degree oven for 20-25 minutes
-saute finely chopped onion in oil
-when broccoli is cool chop into small pieces, mix together with onion

-preheat oven to frozen pie shell instructions
-pre-cook pie shells according to package instructions (put on baking sheets for ease of getting in and out of oven)
-turn oven down to 350 degrees when shells are cooked

-when pie shells are cooked sprinkle half of the grated cheese onto pie crusts (leave pies on baking sheets)
-distribute broccoli and onion evenly between 3 pies
-mix eggs, cream, parmesan, salt and pepper and pour over pies
-sprinkle remaining cheese on top and put right into 350 degree oven
-bake for approximately 45 minutes, checking after about 30 minutes
