1/2 cup butter
1 (16 ounce) package sliced mushrooms
salt to taste
1/3 cup all-purpose flour
2 cps beef stock
1 pinch ground black pepper to taste
fresh thyme leaves, to taste

Directions:
Directions:
Heat butter over medium heat in a saucepan until it foams. Stir in mushrooms. Season with salt. Simmer about 8-10 minutes.

Lower the heat and stir in the flour, cooking and stirring for about 5 minutes. Add about 1 cup of beef stock, stirring briskly until incorporated, then other cup of stock and mix thoroughly. Season with black pepper and thyme.

Increase heat to medium-low, and simmer until thickened, about 10 minutes, stirring often. Don't let it boil, decrease the heat if necessary.

I accidently added half the stock the original recipe called for but I turned out absolutely delicious and full of mushrooms so I decided to stick with that amount in the future. It really is a delicious gravy. Great with beef and pork.
