1 # ground lamb
1 onion, minced
1/2 c panko
1 egg
2 garlic
1/4 bunch cilantro
1 t each: cumin, coriander, paprika
1/2 t each: cinnamon, cayenne, s & p
1 T oo for cooking

Mix, roll into balls, and bake in 390 oven for 20 minutes.

We love to celebrate Passover, and since our family unit is only two now, we have found that this is just about perfect to represent our Passover Lamb. It's spicy and delicious and can be served with a cooling sauce if desired:

1 c yogurt
1 garlic
2 T mint
s & p
squeeze of lemon
