4 c chicken broth
1 c water
1 lb chicken
4 frozen corn cobettes
1 T olive oil
1 small onion, thinly sliced
1 celery stalk, thinly sliced
4 garlic cloves
2 medium russet potatoes, peeled and cut into 1 inch pieces
2 T lime juice
1/2 t dried oregano
salt and pepper
avocado, cilantro, capers, optional

Directions:
Directions:
In large saucepan, combine broth and water and bring to boil. Add chicken and corn and simmer until chicken is cooked. Remove corn and chicken. Remove sauce and save.

Cook onion and garlic over medium heat, about 2-3 minutes.

Add potatoes and reserved liquid and boil, then simmer until potatoes are done, 15-20 minutes.

Shred chicken, slice corn off cob and add to soup. Add lime, oregano, salt and pepper. Cook 1 minute.
Serve with avocado, cilantro. capers.
