6.5 oz jar artichoke hearts, drained and chopped
2 T grated Parmesan
2 T thyme
4 6 oz chicken breasts
1 shallot, thinly sliced
olive oil
salt and pepper
2 beefsteak tomatoes, cut into bite size pieces
1 T red wine vinegar

Directions:
Directions:
Mix Parmesan, thyme & artichokes. Slice chicken in half but not all the way through. Stuff parmesan mixture into chicken. Rub chicken in oil then season with salt and pepper. Cook in skillet over medium heat until done.

Mix tomato, shallot and vinegar plus 1/4 t each of salt and pepper. Add 1 T oil and thyme.
