1 cup sliced almonds
1 cup sugar (divided)
1 1/2 tbsp poppy seeds
1 tsp salt
1/2 cup cider vinegar
2 tsp grated onion or dried onions
1 cup canola oil
Baby spinach (for large salad use Costco spinach)
10-20 sliced strawberries
(Other fruit may be used also)

Almonds:
Put almonds in a pan with 1/4 cup sugar and cook, stir fast to make sure they don’t burn. Place on a plate to cool.

Dressing:
Mix remaining sugar (3/4 cup), poppy seeds, salt, cider vinegar, grated onion (or dried onions), & canola oil. Mix thoroughly to emulsify. Should turn white. Refrigerated at least one hour before serving.

Salad:
Top spinach with sliced strawberries, dressing and almonds them toss.
