3 eggs, beaten
1 cup oil
1 cup sugar
2 cups grated zucchini
2 tsp. vanilla extract

3 cups flour
1 tsp. salt
1 tsp. cinnamon
tsp. baking powder
1 tsp. baking soda

Directions:
Directions:
Combine first 3 ingredients, then add zucchini and vanilla. Combine remaining ingredients and add to first mixture. Grease and flour 2 loaf pans, fill each 1/2 full, bake at 325F for 1 hour.

One of our favorites growing up and Mom made it often! Some of our family friends used to save Jen big zucchini so she could make many loafs out of one vegetable!
