1 c uncooked long grain white rice
2 c water
1 onion diced
1 tbsp olive oil
2 c tomato sauce
1 c beef broth
1 tbsp balsamic vinegar
¼ tsp red pepper flakes
1 pound ground beef
1 link hot Italian sausage
1 10oz can diced tomatoes
¼ c chopped fresh parsley
4 cloves garlic, minced
2 tsp salt
1 tsp black pepper
1 pinch cayenne pepper
4 large green bell peppers, tops cut off and seeded
1 c grated Parmesan cheese

Directions:

Preheat oven to 350ºF
Bring rice and water to a boil and cook until done.

Cook onion and olive oil over medium heat until onion begins to soften, about 5 mins. Transfer half of cooked onion to large bowl and set aside.

Stir in tomato sauce, broth, balsamic vinegar, and red pepper flakes into skillet. Cook for 1 minute.

Pour tomato sauce into a 9x13 baking dish and set aside.

Combine beef, sausage, diced tomatoes, parsley, garlic, salt, black pepper, and cayenne into bowl with reserved onions, mix well. Stir in cooked rice and Parmesan cheese. Stuff peppers with beef mixture. Place stuffed green peppers in baking dish over tomato sauce, sprinkle with remaining cheese.

Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 20 minutes, until meat is cooked. ©
