Crust:
c sugar
3 tbsp butter, softened
1 c all - purpose flour

Topping:
3 large eggs
c sugar
2 tsp grated lemon rind
⅓ c fresh lemon juice
3 tbsp all-purpose flour
tsp baking powder
⅔ tsp salt
2 tsp powdered sugar

Directions:
Directions:
Preheat oven to 350F

Crust: Beat c sugar and butter at medium speed of mixer until creamy. Lightly spoon 1 c flour into dry measuring cup, and level. Add 1 cup flour to sugar mixture, beating at low speed until mixture resembles fine crumbs. Press into bottom of 8" square pan - Bake at 350F for 15 minutes, cool.

Topping: Beat eggs at medium speed until foamy. Add c sugar, 2 tsp grated lemon rind, 3 tbsp all - purpose flour, tsp baking powder, and ⅔ tsp salt. Beat until well - blended. Bat for 20-25 minutes or until set. Cool. Sift powdered sugar evenly over top.
