1 red onion
1/2 t garlic
Salt & pepper
2 T lemon juice
2 T red-wine vinegar
1 t Dijon mustard
1/4 t sugar
3/4 t dried oregano
1/2 c olive oil
5 c cocktail tomatoes
4 c chopped cucumbers
5 c mixed yellow and orange bell peppers
1 c feta cheese
3/4 c diced pepperoni

Directions:

Soak onion in cold water
Whisk juice, vinegar, mustard, sugar, oregano,
Whisk in oil
Add tomatoes
Top with cucumbers, peppers, feta, pepperoni, and onion.
Cover and refrigerate one day
Toss
