2 Tbs olive oil
2 garlic cloves, chopped
1 lb.escarole, chopped
4 cups low-salt chicken broth
1 15 oz. can cannellini beans, drained and rinsed
1 1 oz. piece Parmesan
Freshly ground black pepper and salt
6 tsp. extra-virgin olive oil

Directions:
Directions:
Heat 2 tablespoons olive oil in a heavy large pot over medium heat. Add garlic, saute until fragrant, about 15 seconds. Add escarole, saute until wilted, about 2 min. Add pinch of salt. Add chicken broth, beans, and Parmesan cheese. Cover and simmer until beans are heated through, about 5 min. Season with salt and pepper. Ladle soup into bowls. Drizzle 1 tsp. extra-virgin olive oil over each. Serve with crusty bread.
