1 cup of shredded, packed zucchini
2 eggs
1/2 cup oil (1/4 coconut, 1/4 veg)
1/2 cup greek yogurt
1 tsp. vanilla
1.5 cups flour
3/4 cup sugar
1 tsp. baking powder
1/2 tsp. salt
1 tsp. pumpkin pie spice


1/2 cup sugar
1 tbsp. cinnamon

1. Preheat oven to 350 and grease a large loaf pan.
2. Mix all ingredients until well combined.
3. Pour half of the mix in the pan and sprinkle with half of the sugar mixture. Cover with remaining batter and then sugar. Marble.
4. Bake for 45-60 minutes.
