Ingredients:  
2 heads of garlic
1 tsp.olive oil
1/4 c. Margarine
3 c. chopped onions
3/4 c. chopped carrots
1/2 c. chopped celery
4 lbs. butternut squash, peeled and cut into 1 inch pieces
6 c. chicken broth
2 tsp. thyme
1/2 c. half & half cream

Directions:
Directions:
Roast garlic till soft. Melt marg. in large pot. Saute onions, carrots and celery a few minutes. Add squash, broth, thyme. Simmer about 1/2 hour or till squash is soft. Meanwhile, open garlic, squeeze out of skins and mash. Add to soup. When done, puree soup in blender, add cream and serve.
