1 + 1/4 cups milk
2 tbsps. butter or margarine
3/4 cup quick cooking oats, uncooked
1 egg
1 + 1/2 cups sifted enriched flour
1/4 cup plus 3 tablespoons sugar
1/2 tsp. salt
4 teaspoons baking powder
1/2 tsp. cinnamon
1 apple

Directions:
Directions:
Scald milk. Add butter or margarine and pour over oats. Beat egg and add. Sift flour, 3 tbsp. sugar, salt and baking powder. Add to oat mixture stirring only enough to moisten. Fill 12 greased muffin pans 2/3 full.

Combine 1/4 cup sugar and cinnamon. Peel, core and quarter apple.
Cut into 3rds and dip each slice into sugar + cinnamon mixture and press curved sid up, into each muffin.

Bake in hot ove (400 degrees F) for 20-25 minutes

Makes 12 muffins.
