8 large carrots
3 large sweet potatoes
4 large white potatoes
1 tsp. salt
½ cup sugar (or less)
2 lbs. brisket (cut into serving pieces)
3 tbsp. melted chicken fat
Shortening for greasing pot

Directions:
Directions:
Peel carrots and sweet potatoes and cut into ½ inch slices.
Grease large pot with shortening.
Place sliced carrots and sweet potatoes in pot with meat (cut into serving pieces).
Season with salt and sugar.
Cover with water and bring to a boil on top of stove.
Lower heat and cook gently for about 1 hour.
Peel then grate white potatoes.
Strain water off and let liquid stand 10 minutes so that potato starch will settle on the bottom.
Pour off top liquid and return settled starch to grated potatoes and blend with salt and melted chicken fat.
Push aside meat, carrots, and sweet potatoes from one section of pot and gently slide white potato mix into boiling liquid.
Remove pot from top of stove and put in oven at 350ºF for 2 or 3 hours or until done.
