Spinach Pie Recipe

2 cups frozen chopped spinach - thaw and excess water squeezed out
7 slices of bacon
1 1/3 milk
3 large eggs
1 tsp salt
1/2 tsp nutmeg
2/3 cup swiss cheese - shredded
premade pie dough (you can make your own or use premade)

Directions:

Preheat oven to 350º.

In a medium sized skillet, fry the bacon until crisp. Remove to a paper towel to drain.

Lightly beat eggs, milk and nutmeg together. Crumble the bacon. Place crust onto a 9" pie plate. Spoon spinach into pie shell. Sprinkle bacon and cheese onto the top. Pour the egg mixture into the pie shell on top of the bacon and cheese. Back 30-40 minutes until egg mixture is set.

When I made these I made them in a muffin tin as individual pies. If you choose to do this they will only need about 10-15 minutes, cheese should be bubbly and just turning brown.
