For the Bars:
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
½ tsp. salt
2 c. sugar
4 eggs, slightly beaten
2 c. pumpkin puree
1 c. salad oil
chopped nuts (optional)

For the Frosting:
3 oz. cream cheese, softened
6 tbsp. butter
1¾ c. sifted powdered sugar
1 tsp. milk
1 tsp. vanilla flavoring

For Bars:
Sift dry ingredients, including sugar. Add beaten eggs, pumpkin, and oil to the dry ingredients and mix. Blend in nuts, if desired. Pour batter into two greased and floured 9 x 13-inch pans. Bake at 350º for 25 minutes. Serve plain or with cream cheese frosting.

For Frosting:
Blend ingredients and spread on COLD pumpkin bars.
