1/2 C coconut milk

2 Tbs brown sugar

1 Tbs soy sauce

1 Tbs ketchup
1 Tbs peanut butter

1 tsp fish sauce

1/2 tsp crushed red pepper

2 Tbs chopped fresh cilantro

1 lb boneless pork tenderloin, thinly sliced

1 tsp sesame oil

1 clove garlic - minced

1/2 tsp salt and pepper

cooked rice

Spray grill or broiler rack - pre heat

bring coconut milk, brown sugar, soy sauce, ketchup, peanut butter, fish sauce and red pepper flakes to a boil over

medium heat - about 5 min. Remove from heat, stir in cilantro. Cover and keep warm.

Combine pork, sesame oil, garlic, salt and pepper in a bowl. Toss to coat

Thread pork onto skewers. Grill or broil 5" from heat until cooked thru, about 2 min per side.

Serve over rice
