Crockpot Chicken Noodle Soup Recipe

1 1/2 pounds of chicken (bones are better!)
2 cups carrots, peeled, chopped
1 medium yellow onion, diced
3 cellery stalks, chopped
3-4 cloves of garlic, minced
2 tbsp olive oil
1/2 tsp thyme
2 cups egg noodles
1 bay leaf
6 cups chicken broth/bullion
1 cup water
3 tbsp parsley

Put everything except the egg noodles and parsley into the crock pot, cook on low for 6-7 hours

Remove bones.

Remove chicken and shred, put back in crock pot.

Add egg noodles + parsley, cook until noodles are tender (5-10 min). Alternatively, you can cook noodles on the stove top and add in later.
