1 c. flour
¾ c. quick cooking oats
1 c. brown sugar
½ c. melted shortening
1 tsp. cinnamon
4-5 c. diced rhubarb
1 c. sugar
2 T. cornstarch
1 c. water or fruit juice
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350º. Mix flour, oats, brown sugar, shortening, and cinnamon together until crumbly. Press half of mixture into 9x13 pan. Cover with rhubarb. In small saucepan combine sugar, cornstarch, water or fruit juice, and vanilla. Cook stirring constantly until thick and clear. Pour over rhubarb and top with remaining crumb mixture. Bake for 1 hour.
