Ingredients:  
1 whole chicken cut and most of skin off & fat
1 8oz can tomato sauce
4 med russet potatoes
4 large carrots
1 c. green olives with pit & some juice
1/2 c. can jalapenos sliced with juice (can be less or more)
2 large garlic cloves
4 med bay leafs
1/2 med brown or white onion
2 tbsp. chicken Knorr
Salt to taste & pinch of Oregano

Directions:
Directions:
In 2 quart pan place chicken and sprinkle salt. Place chopped onion & carrots and blend tomato sauce, garlic, onion, and Knorr, then pour over chicken. Pour jalapenos & olives with a little juice of both, then place bay leaves on top & sprinkle a pinch of oregano. Cover for 45 min on low flame, taste if salt is needed or a little bit of water.
