2 Cups Zucchini (shredded)
2 Cups Sugar
3 Cups Flour
3 Eggs
1 Teaspoon Vanilla
1 Cup Oil
1 Teaspoon Baking Soda
1 Teaspoon Salt
1 Teaspoon Baking Powder
3 Teaspoons Cinnamon
Optional ( Nuts, Pineapple, Apple, Blueberries, Chocolate Chips)

Directions:

Mix wet ingredients well.
Mix dry ingredients well.
Add all mixes and mix well.
Pour into 2 greased and floured loaf pans.
Bake 350* for 1 hour or until done.
