Ingredients:  
1 Boneless Skinless Chicken Breast, Cut into bite size pieces
2 tbsp cornstarch
¼ tsp Kosher Salt
¼ tsp black pepper
1 ½ tbsp canola oil
1 ½ Medium Red Bell Peppers, Cut into bite size pieces
2 Cups Broccoli Florets
½ bunch Green Onion, thinly sliced
⅓ Cup dry roasted, unsalted cashews
Cooked Brown Rice, for serving (we normally measure 1 cup and follow the rice cooking instructions) *Brown Rice can be substituted for any rice you like - I think Jasmine is best =)

SAUCE:
3 tbsp seasoned rice vinegar (found in Asian section at the store)
¼ cup reduced sodium soy sauce
2 tbsp honey
1 tbsp freshly grated ginger
4 cloves garlic, minced
¼ - ½ tsp red pepper flakes

Directions:
Directions:
*Make sure you cook the rice before or durning the other stuff so its ready to serve when the chicken is done!

1. In a small bowl, prepare the sauce. Add all ingredients together and stir. Set aside.
2. In a small bowl, toss chicken pieces w/ cornstarch, salt and pepper
3. Heat oil in large skillet over medium high. Once the oil is hot and shiny, add the chicken mixture and sauté for 5 minutes, just until lightly browned.
4. Add bell pepper, broccoli, and green onions. Continue sautéing until the chicken is cooked through and veggies are crisp-tender, about 5 minutes. Stir in cashews and cook additional 30 seconds
5. Pour sauce over skillet and toss to coat

Serve on a bed of rice and enjoy!

This recipe is a lot of work and a lot of ingredients... but its 100% worth it!! Its So Delicious And looks so beautiful and fresh you definitely want to take a picture of it!
