Ingredients: 1 Boneless Skinless Chicken Breast, Cut into bite-size pieces 2 tbsp cornstarch ¼ tsp Kosher Salt ¼ tsp black pepper 1 ½ tbsp canola oil 1 ½ Medium Red Bell Peppers, Cut into bite-size pieces 2 Cups Broccoli Florets ½ bunch Green Onion, thinly sliced ⅓ Cup dry roasted, unsalted cashews Cooked Brown Rice, or any rice, - I think Jasmine is best =) *Cook the Rice first.*
SAUCE: 3 tbsp seasoned rice vinegar (found in the Asian section at the store) ¼ cup reduced-sodium soy sauce 2 tbsp honey 1 tbsp freshly grated ginger 4 cloves garlic, minced ¼ - ½ tsp red pepper flakes

Directions:1. In a small bowl, prepare the sauce. Add all ingredients together and stir. Set aside. 2. In a small bowl, toss chicken pieces w/ cornstarch, salt, and pepper 3. Heat oil in a large skillet over medium-high until hot and shiny, add the chicken, sauté until lightly browned. 4. Add bell pepper, broccoli, and green onions. Continue sautéing until the chicken is cooked through and veggies are crisp-tender, about 5 minutes. Stir in cashews and cook an additional 30 seconds. 5. Pour sauce over ingredients in the skillet and toss to coat Serve on a bed of rice and enjoy! |
