1 1/2 cups chopped broccoli
1 1/2 cups egg substitute
1/3 cup plain fat free Greek Yogurt
1/4 cup 1% milk
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
3/4 cup shredded reduced fat cheddar cheese
2 tbsp. chopped scallions

Preheat oven to 375º. Spray a 9-inch pie pan with cooking spray.
Place broccoli in a medium-large microwave safe bowl. Add 1/4 cup water. Cover and microwave for 2 1/2 minutes, or until soft. Drain excess liquid.
In a large bowl, combine egg substitute, yogurt, milk, and seasonings. Whisk until uniform.
Place broccoli and cheese in prepared pan. Pour egg mixture over all. Bake until firm and cooked through, about 25 mintues. Top with scallions.
