1½ qts. zucchini, chopped
1 large onion, chopped
½ -1 lb. ground beef
½ -1 c. mushrooms, sliced
1 large clove garlic, chopped
1 tsp. dried basil or oregano
salt and pepper to taste
3 c. chopped fresh tomatoes or canned stewed
½ c. Parmesan cheese

Directions:
Directions:
In a large pot, saute beef. Add onion, garlic, mushrooms, salt, pepper, basil and tomatoes; heat to boiling, add zucchini, cover and simmer until squash is tender. If too liquidity, simmer a little longer with no cover. Stir in Parmesan cheese. Serve over rice or with spaghetti and with extra Parmesan cheese.
